POMEGRANATE FIZZ

INGREDIENTS
4 sprigs of rosemary, plus extra for garnish • 400ml pomegranate juice • juice of ½ lemon • 750ml alcohol-free sparkling wine, chilled • handful of pomegranate seeds, to garnish
METHOD
1. Add the rosemary and pomengranate juice to a saucepan and bring to the boil, then reduce the heat and simmer for 10 mins. Add the lemon juice.
2. Leave the mixture to cool, then strain it and put it in the fridge. Sufficiently chilled? Pour 30ml into a flute and top up with alcohol-free sparkling wine. Garnish each glass with a scattering of pomegranate seeds and a rosemary sprig.
