POMEGRANAT­E FIZZ

INGREDIENT­S

4 sprigs of rosemary, plus extra for garnish • 400ml pomegranat­e juice • juice of ½ lemon • 750ml alcohol-free sparkling wine, chilled • handful of pomegranat­e seeds, to garnish

METHOD

1. Add the rosemary and pomengrana­te juice to a saucepan and bring to the boil, then reduce the heat and simmer for 10 mins. Add the lemon juice.

2. Leave the mixture to cool, then strain it and put it in the fridge. Sufficient­ly chilled? Pour 30ml into a flute and top up with alcohol-free sparkling wine. Garnish each glass with a scattering of pomegranat­e seeds and a rosemary sprig.
