VEGAN EGGNOG

INGREDIENTS
125ml almond milk • 125ml light coconut milk • 1 tbsp maple syrup • 2 tsp vanilla essence • pinch of ground nutmeg • pinch of salt • 40ml rum • cinnamon stick, to garnish
METHOD
1. Combine all the ingredients (minus the rum) in a saucepan and bring to a boil, then reduce the heat to a simmer while whisking continuously. Keep this up for 4 mins.
2. Remove the pan from the heat and pour its contents into a jar to cool. Once cooled, seal the jar and put it in the fridge for at least 4 hrs before serving. Now, pour in a shot of rum and give it a stir with a cinnamon sitck.
