Sweet potato jack­ets

IN­GRE­DI­ENTS 2 sweet pota­toes • 185g tin of tuna, drained • ½ red onion, finely sliced • 1 small red chilli, sliced • juice of 1 lime • 6 tbsp Greek yo­ghurt • hand­ful of co­rian­der leaves


1. Prick the pota­toes with a fork and mi­crowave un­til ten­der – roughly 12 mins. 2. Split in half and top with the rest of the in­gre­di­ents. Bon ap­pétit.
