CHICKEN AND AMARANTH STEW

Whether popped, puffed or ground into flour, amaranth is rich in niacin, which boosts levels of good HDL cholestero­l and combats harmful triglyceri­des, reducing your risk of heart disease

INGREDIENT­S

1 whole chicken • 2 carrots, quartered • 2 celery sticks, quartered • 2 onions, quartered • 2 bay leaves • 8 sage leaves, shredded • 300g amaranth • 2 leeks, finely chopped

METHOD

1 | To kick things off, pop the chicken in a large saucepan, along with the carrots, celery, onion and herbs.

2 | Pour in water until it’s covering the bird and bring the whole thing to a boil, before simmering gently for an hour or until cooked through.

3 | Carefully take out the chicken and veg and place them on a separate surface to cool – you can leave the stock in the pan for now.

4 | Channellin­g your inner Masterchef contestant, remove the meat from the bones, then chop up the veg however you like.

5 | With the stock still in the pan, chuck in the amaranth and leeks and simmer for 5 mins.

6| Drop the meat and vegetables back into the stew and gently heat. Once the amaranth is cooked, season with a pinch of salt and pepper and serve. A hearty, healthy hug in a bowl.
