Veganism is no doubt flourishing, but most of the amusingly named substitutes – breaded chick*n, mock dogs – are unidentifiable as any kind of plant. Tempeh is different; originating in Indonesia (but now present and correct in the chilled aisles of Sainsbury’s), it’s a dense, fermented bean cake. You’re salivating now, right? Well, its nutritional profile is a touch more delicious-sounding. ‘It’s super rich in calcium, iron, manganese and vitamin K2,’ says nutritional therapist Alice Mackintosh, while nutritionist Tabitha Ward adds that research suggests eating high-protein soya foods can benefit your mood. It’ll certainly make you smile more than a ‘facon’ rasher.
