HONEY PANCAKES
Quinoa has 15% of your iron RDA (to help you build lean muscle) in a 185g serving, so you’ll be well on your way with this brunch of champs. The orange blossom honey supplies antioxidants, too
INGREDIENTS
200g white quinoa • 40g flour • 4 tbsp milk • 1 egg, beaten • pinch of sugar • drop of olive oil • 4 tbsp
orange blossom honey (regular honey is fine if you can’t get your hands on it) •
2 pinches of ground cinnamon • 80g
mixed berries
METHOD
1 | Ready to test your pancake-flipping skills? Before you get there, boil your white quinoa for 12 mins.
2 | Allow it to cool, then drain and whisk it up in a bowl with the flour, milk, beaten egg, 4 tbsp water, and a pinch each of salt and sugar.
3 | Fry small dollops of the mixture in a drop of olive oil until each pancake is golden on both sides.
4 | Stack them on two plates, then drizzle over the honey, dust with cinnamon and top with berries. Flipping delicious.
