MIXED-GRAIN FATTOUSH WITH CHICKEN AND SUMAC YOGURT

Adding slow-release carbs like mixed grains to this traditiona­l Lebanese salad is a great way to turn it into a more substantia­l meal

INGREDIENT­S

4 tbsp olive oil • 75g Arla Skyr Creamy yogurt • 2 tbsp lemon juice • 1 clove garlic, crushed • 1 tsp sumac, plus extra to garnish • 250g pouch mixed grains • 1 pitta bread, toasted • 100g cucumber, cut into chunks • 4 radishes, finely sliced

• 100g heritage or vine tomatoes, roughly chopped • 1 baby gem lettuce, torn into pieces • 2 spring onions, finely sliced • 10g mint leaves, roughly chopped • 250g cooked chicken breast, shredded • 2 tbsp pomegranat­e molasses

METHOD

1 | To make the dressing, mix together 2 tbsp olive oil, the yogurt, 1 tbsp lemon juice, garlic and sumac. Set aside. 2 | For the salad, crumble the mixed grains into a bowl and tear in the pitta bread. Add the cucumber, radish, tomatoes, baby gem, spring onions, mint leaves, chicken, reserved lemon juice, molasses and reserved olive oil. Season generously and toss together until well combined.

3 | To serve, divide the salad between 4 plates, spoon over the yogurt dressing and top with extra sumac.
