Chocolate banana bread

90g walnuts
3 large ripe bananas, mashed
150g sugar
120ml extra-virgin olive oil
1 tsp pure vanilla extract
250g plain flour
1½ tsp baking powder
½ tsp bicarbonate of soda
¾ tsp salt
¾ tsp ground cinnamon
80g vegan dark chocolate, chopped or chocolate chips, plus more for the topping
01. Heat the oven to 180°C. Spray an 8” x 4” loaf tin with cooking spray and line with parchment paper, leaving it to overhang on the long sides.
02. Spread the walnuts on a baking tray and bake until fragrant, about 10 mins. Allow to cool, then coarsely chop.
03. In a large bowl, whisk together the bananas, sugar, oil and vanilla. In another bowl, mix the flour, baking powder, baking soda, salt and cinnamon, then stir into the banana mixture until just combined (batter should be thick). Fold in the chocolate and the walnuts.
04. Transfer the batter to the lined tin, smooth the top and then sprinkle with additional chocolate pieces, if desired. Bake the cake until a toothpick inserted into the centre comes out with a few moist crumbs attached, about 55 to 60 mins. Once baked, allow it to cool for 20 mins in the tin, then use the overhangs to transfer it to a wire rack to cool completely.
