Sautéeddan­delion toast

Total: 15 mins Serves: 4 2 tbsp olive oil 1 small red onion, thinly sliced

⅛ tsp red pepper flakes 1 tsp grated lemon zest, plus 2 tbsp juice 1 bunch of dandelion greens, 15cm of stalk discarded 110g feta 60g natural yoghurt 1 ciabatta loaf, split in half and toasted

Small mint leaves, for serving 01. Heat the oil in a large frying pan on a medium heat. Add the onion and red pepper and sauté until just tender, around 6 mins. Add the lemon juice and cook until it evaporates, around 30 secs. 02. Remove from the heat. Add the dandelion greens, season with ¼ tsp each of salt and pepper and toss until the greens begin to wilt. 03. Meanwhile, crumble the feta into a mini food processor and pulse 4 times. With the machine still running, add the yoghurt, then the lemon zest and puree until smooth. Spread it on the bread, then top with the greens and sprinkle with the mint.
