Griddled baby pak choi

Total: 15 mins Serves: 4 1 navel orange, halved 1 tsp grated lime zest, plus 2 tbsp juice ½ tsp honey 1 tsp grated fresh ginger

½ clove of garlic, grated 1 jalapeño, thinly sliced 3 tbsp olive oil, divided 4 heads of baby pak choi, halved 01. Heat a griddle pan to mediumhigh. Juice ½ an orange into a bowl (you should have about 2 tbsp), then cut the remaining half into 3 wedges. Put the lime zest and juice in a bowl, whisking in the honey and ½ tsp salt to dissolve. Then stir in the ginger, garlic, jalapeño slices and 2 tbsp oil. 02. Toss the pak choi with the remaining oil and season with a pinch of salt. Griddle it cut-side down for 2 mins, then turn and cook until just tender, 1 to 2 mins more; transfer to a serving plate. Griddle the orange wedges until just charred, around 1 to 2 mins; add to the plate. Finish by drizzling the dressing over the pak choi.
