Microgreen salad

Total: 15 mins Serves: 4 2 tbsp red wine vinegar 2 tsp wholegrain mustard 1 tsp Dijon mustard ½ tsp honey ½ small bulb of fennel, thinly sliced ¼ small sweet onion, thinly sliced 2 heads of gem lettuce, leaves separated 110g microgreen­s 01. In a bowl, whisk together the vinegar, mustards, honey, 1 tbsp of warm water and ½ tsp of salt. Add the fennel and onion, and allow it to sit for 5 mins or so. 02. Add the lettuce and toss it to coat in the dressing. Gently fold in the microgreen­s.
