The Canal du Midi is the second half of the Canal de Deux Mers, through which shallow-draught boats may potentiall­y travel from the Atlantic to the Mediterran­ean. The first, the Canal de la Garonne, is a 19th century artefact linking Bordeaux to Toulouse: the much older Canal du Midi was conceived during the reign of Louis XIV, runs from Toulouse to Sète and is a UNESCO world heritage site. Andrea Hoffman’s text and Hans Zaglitsch’s photos provide an effective brief introducti­on to the gorgeous architectu­re, unpleasant history and rich cuisine of this waterway.
