We all love deep yellow egg yolks. Pale yolks are traditionally a sign of sick hens or poorly fed hens. I have read, however, that there is a bit of a north-south divide on the colour of yolks. While northerners, including Canadians, tend to prefer pale yellow yolks, it seems that down towards the Mediterranean, bright orange yolks are a must and anything less than a dark yellow yolk is not tolerated.
