We all love deep yel­low egg yolks. Pale yolks are tra­di­tion­ally a sign of sick hens or poorly fed hens. I have read, how­ever, that there is a bit of a north-south di­vide on the colour of yolks. While north­ern­ers, in­clud­ing Cana­di­ans, tend to pre­fer pale yel­low yolks, it seems that down to­wards the Mediter­ranean, bright or­ange yolks are a must and any­thing less than a dark yel­low yolk is not tol­er­ated.
