Wild garlic pesto
PREP 10 minutes MAKES 1 jar
YOU WILL NEED
100g wild garlic 50g Parmesan, grated 50g hazelnuts, skinned and toasted Olive oil Lemon juice, to taste Salt and pepper
1 Thoroughly wash the wild garlic and place in a food processor. Blitz until the garlic leaves are fairly well broken up.
2 Next, add the Parmesan and blitz further.
3 Add the hazelnuts. When the nuts are added, make sure you have the olive oil to hand as you’ll need to turn the machine on and add the oil until you get your desired consistency.
4 Add salt, pepper and lemon juice to taste.
