Pesto turkey burgers

PREP 10 minutes COOK 34 minutes SERVES 4

YOU WILL NEED

500g pack Essential Waitrose British turkey breast mince 2 tbsp Sacla’ Classic Basil Pesto or pre-prepared wild garlic pesto 4 salad onions, thinly sliced 1 pack 4 Waitrose Italian-Style ciabatta rolls 2 large tomatoes, thickly sliced

1 Preheat the oven to 200°C/180°C Fan/Gas Mark 6. In a large bowl, mix together the mince, pesto and salad onions. Using damp hands, shape into four even-sized burgers.

2 Cook the burgers in a large, non-stick frying pan for 5-8 minutes on each side until browned and completely cooked through.

3 Meanwhile, heat the ciabatta rolls for 8-10 minutes, according to packet instructio­ns.

4 Split the rolls and place a couple of tomato slices on the base of each. Top with the burgers, drizzle with a little extra pesto if you wish, replace the top of the roll and serve.
