Child-friendly pasta sauce
YOU WILL NEED
1 tbsp olive oil
1 onion, diced
1 garlic clove, crushed
1 tsp dried mixed herbs
1 large carrot, peeled and chopped
1 red pepper, chopped
1 courgette, chopped
1 small sweet potato, peeled and chopped
400g tin chopped tomatoes
100g Real Good ketchup
300ml vegetable stock
5 tbsp unsweetened yogurt (optional)
300g pasta
DIRECTIONS
■ Heat the olive oil in a large pan and add the onion and garlic. Fry for 5 minutes until softened. Stir in the mixed herbs, carrot, pepper, courgette and sweet potato and fry for another 10 minutes until the vegetables are tender.
■ Pour in the tinned tomatoes, ketchup and stock. Simmer with a lid on for 25 minutes until really soft and then allow to cool slightly before blending to a smooth sauce. You can choose to blend in the yogurt or serve on top of the sauce.
■ Cook the pasta according to packet instructions then stir through the sauce and serve. Store the sauce in a sealed container for up to 5 days or in the freezer for a few months.
