Minted melon, feta and ham salad

1 Waitrose Piel De Sapo Melon

90g rocket

7 slices of Serrano or Parma ham

100g feta cheese, roughly crumbled

2 tbsp fresh mint, finely chopped

Freshly ground black pepper

Juice of 1 small lemon

2 tbsp extra virgin olive oil

DIRECTIONS

■ Halve the melon, then scoop out the seeds with a spoon and discard them. Slice each half of the melon into 8 wedges. Cut away the flesh from the rind, keeping the melon in large pieces.

■ Scatter ¾ of the rocket leaves over a large bowl or serving platter. Top with the melon wedges.

■ Tear each slice of ham in half then arrange the pieces over the melon along with the feta cheese and remaining rocket leaves.

■ Add a scattering of the mint and some freshly ground black pepper.

■ Whisk together the lemon juice and olive oil, then drizzle over the dish to serve.
