Frozen strawberry, maple and yogurt bark

YOU WILL NEED

4 tbsp maple syrup 250g low-fat Greek yogurt 1 tsp vanilla extract ½ tsp lemon juice

100g fresh berries 30g roasted almonds, roughly chopped

DIRECTIONS

■ Add the maple syrup, Greek yogurt, vanilla extract and lemon juice to a bowl and then whisk together to combine.

■ Pour the mixture into a shallow baking tray lined with baking paper. Stud the mixture with the berries and chopped almonds and then place in the freezer for 12 hours.

■ Once frozen, remove from the freezer and slice into shards. Serve immediatel­y or place back in the freezer to enjoy when desired.
