Posh fish and chips

YOU WILL NEED

400g baby new potatoes, unpeeled and quartered 2 tbsp olive oil 40g breadcrumb­s 10g parsley, finely chopped 1 lemon, zested and juiced 2 salmon fillets 60g butter

DIRECTIONS

■ Preheat the oven to 200°C/180°C Fan/Gas Mark 6.

■ In a large saucepan filled with water, boil the potatoes for 5 minutes. Once softened, drain.

■ Put the potatoes into a large bowl, add 1 tbsp olive oil and some salt. Toss the potatoes until they’re coated in the oil.

■ Put them into a baking dish and place in the oven for 20 minutes.

■ Meanwhile, combine the breadcrumb­s, parsley and lemon zest in a bowl.

■ Season the salmon generously with salt and pepper.

■ Heat a frying pan over a high heat with 1 tbsp olive oil. Place the salmon fillets skin-side up into the pan and fry for 2 minutes. Turn over the fillets and fry for another 2 minutes.

■ Preheat the grill on a high heat.

■ Top the salmon fillets with the breadcrumb mix, then add little dots of butter on top (saving some for later).

■ Place the pan under the grill for around 7 minutes, until the crumbs are slightly golden.

■ Top the fillets with the remaining butter and lemon juice, then return to the grill for another 2 minutes.

■ Serve straight away with the chips from the oven.
