SERVES: 4 (MAKES 12) PREP:15 MINS COOK: 30 MINS
500g (1lb 2oz) floury potatoes, such as King Edward, peeled 1 medium onion
2 large eggs, beaten Low-calorie cooking spray 200g (7oz) smoked salmon 2 tbsp fat-free natural Greek yogurt
Fresh dill sprigs, to serve Lemon wedges, to serve
1. Preheat the oven to 150°C/300°F/Gas Mark
2. Coarsely grate the potatoes and onion using a grater or food processor. Mix in ½ tsp salt and some black pepper and, working with a little of the mixture at a time, wrap small handfuls up into a square of muslin or a new, thin washing-up cloth and squeeze out as much excess liquid as you can. Remove cloth, then transfer to a large bowl and stir in the eggs.
2. Place a large lidded non-stick frying pan over a medium heat and spray
with a little low-calorie cooking spray. To make the latkes, drop 4 slightly heaped tbsps of the potato mixture into the pan, spaced well apart, and flatten slightly with a spatula. Cover the pan with a lid and fry for 3 mins or until richly golden brown. Lift the latkes on to a plate and spray the pan with a little more lowcalorie cooking spray.
3. Return the latkes to the pan, browned-side up, and cook for 3 mins or until crisp on the outside and cooked through. Lift each batch on to a baking tray lined with kitchen paper and keep them hot in the oven while you cook the rest. Ruffle small pieces of smoked salmon onto each latke and top with ½ tsp yogurt and a dill sprig. Serve hot with lemon wedges.
