Berben & Wolff’s opening Troy location
Berben & Wolff’s, which has run a vegan deli on Lark Street in Albany for nearly three years and sold seitan products wholesale for about five years, is developing a second deli location, at the corner of Fourth and Ferry streets in downtown Troy. Berben & Wolff’s has used the space, formerly the late-night eatery the Brown Bag, since last summer as a commercial kitchen to produce its various seitan products for distribution to 23 restaurant accounts.
Co-owner Joey Berben said the plan is to expand into another room behind the Brown Bag footprint and run the deli and production kitchen out of the combined spaces.
An opening in late spring is projected, Berben said. Further plans are to buy another building for the commercial production, sites for which are being scouted, and expand the Troy spot into a full-service bar and restaurant. That couldbeayearor more down the road, Berben says, depending on progress on the building search and launching the Troy deli.
Berben & Wolff’s, at 227 Lark, is open 10 a.m. to 8 p.m. Monday to Saturday, 10 a.m. to 3 p.m. Sunday, closed
Monday.
