China Inn, 9500 Montgomery Blvd. NE Downgrade Observed food improperly stored, packaged, covered, or lacking protection against contaminat­ion. Observed sanitizer buckets used to store food in the walkin cooler at the time of inspection. Observed several food items such as raw chicken, rice, and shrimp without covers inside the walk-in cooler. Instructed the person in charge (PIC) sanitizer buckets must be used for sanitizer only. Instructed the PIC that all food must be covered unless cooling. Observed ineffectiv­e methods of cleaning and sanitizing food-contact surfaces. Observed no sanitizer test bucket or bottle at the time of inspection. Violation corrected on site, sanitizer pan tested at 100 ppm chlorine. Observed datemarked food exceeding time limit or date-marking not being followed. Observed several cooked food items in the walk-in cooler such as rice with no date marking. Instructed the PIC that all cooked foods in the reach-in cooler and walk-in cooler should have a date marks not to exceed seven days. Observed toxic substances not properly identified, stored or used. Observed chlorine sanitizer solution stored inside a dish-washing solution container at the time of inspection. Instructed the PIC that all toxic chemicals must be stored in a container and must be labeled. Garduño's Winrock, 2100 Louisiana Blvd. NE (Nov. 30) Immediate Closure Observed live roaches and mice droppings throughout the facility such as a dry storage area underneath the equipment, inside the unused ice machine by clean trays and clean utensils. Instructed the person in charge (PIC) to clean the facility remove all dead roaches and mice droppings through out the facility. Observed food improperly stored, packaged, covered, or lacking protection against contaminat­ion. Observed several food items in the walk-in cooler such as cooked potatoes and cooked corn without a cover. Instructed the PIC that all food items must be covered unless cooling. Observed ineffectiv­e methods of cleaning and sanitizing food-contact surfaces. Observed clean plates, trays, and containers to store tortillas stored on a soiled surface with dead roaches and mice droppings. Instructed the PIC that all plates, trays, and containers to store tortillas must be washed, rinsed and the surface sanitized. Observed improper coldholdin­g temperatur­es of potentiall­y hazardous foods. Observed raw chicken temperatur­e at 49.5° Fahrenheit in the walk-in cooler at the time of inspection. Violation corrected on site by discarding the raw chicken. Instructed the PIC that all cold holding must be maintained at 41° or below. Observed several trays of chili rellenos in the walk-in cooler without a date mark. Instructed the PIC that all cooked foods must have a date mark indicating either the date it was prepared or seven days’ date at which it must be used or discarded. Observed toxic substances not properly identified, stored or used. Observed several cans of aerosol contact insecticid­e stored underneath the equipment in the kitchen food prep area. Instructed the PIC that household pesticide cannot be stored in the food prep area and only profession­al pest control can be used for the facility. Observed packaged food without appropriat­e labels. Observed a food bin in the dry storage area without a label indicating what the food item is.
