Make and chill cran­berry sauce and bonus mulled wine.

TWO DAYS

AHEAD

Roast car­rots and make car­rot-top pesto; cover and chill. Prep stuffed mush­rooms (p.84),

if mak­ing for ap­pe­tiz­ers, re­serv­ing stems for dress­ing or for leftover cal­zones.

ONE DAY

AHEAD

Lay bread cubes out to stale. Chop and chill cel­ery and onion for dress­ing, re­serv­ing trim­mings for stock and gravy.

Slice and chill Brus­sels sprouts.

DAY OF

Roast turkey and make stock. As­sem­ble and bake

dress­ing with gi­blets and stock. Boil and mash po­ta­toes. Make gravy with stock and drip­pings. Bake stuffed mush­rooms (if us­ing). Re­heat car­rots and mulled

wine. Cook Brus­sels. Eat up!
