GAME PLAN FOR MAKING AHEAD & USING EVERYTHING
THREE TO FOUR DAYS
Set frozen turkey in fridge to thaw.
Make and chill cranberry sauce and bonus mulled wine.
Roast carrots and make carrot-top pesto; cover and chill. Prep stuffed mushrooms (p.84),
if making for appetizers, reserving stems for dressing or for leftover calzones.
Lay bread cubes out to stale. Chop and chill celery and onion for dressing, reserving trimmings for stock and gravy.
Slice and chill Brussels sprouts.
Roast turkey and make stock. Assemble and bake
dressing with giblets and stock. Boil and mash potatoes. Make gravy with stock and drippings. Bake stuffed mushrooms (if using). Reheat carrots and mulled
wine. Cook Brussels. Eat up!
