Toss to­gether 1 cup chopped tomato; ½ cup each pome­gran­ate seeds, chopped fresh cilantro, chopped fresh pars­ley, chopped red onion, and minced jalapeño;

2 tsp. lime zest; 6 Tbsp. fresh lime juice; 1½ Tbsp. chopped fresh mint; 2 tsp. olive oil; and ¼ tsp. each salt and black pep­per. Cover and chill at least 2 hours.
