1 cup wild rice

1 cup wa­ter

¾ cup or­ange juice

1 Tbsp. but­ter

¼ tsp. salt

⅛ tsp. black pep­per

1 cup or­ange sec­tions

⅓ cup shelled pis­ta­chios ⅓ cup dried cran­ber­ries Chopped fresh pars­ley, for gar­nish

1. Bring rice, wa­ter, and or­ange juice to a boil in a saucepan. Re­duce heat and sim­mer, cov­ered, un­til rice is ten­der, about 45 min­utes. Re­move from heat.

2. Stir in but­ter, salt, and pep­per.
