Orange Wild Rice with Pistachios and Cranberries
1 cup wild rice
1 cup water
¾ cup orange juice
1 Tbsp. butter
¼ tsp. salt
⅛ tsp. black pepper
1 cup orange sections
⅓ cup shelled pistachios ⅓ cup dried cranberries Chopped fresh parsley, for garnish
1. Bring rice, water, and orange juice to a boil in a saucepan. Reduce heat and simmer, covered, until rice is tender, about 45 minutes. Remove from heat.
2. Stir in butter, salt, and pepper.
