Quick Beef Stir-Fry

1 Tbsp. veg­etable oil, plus more if needed

1 lb. beef sir­loin, thinly sliced ¼ tsp. salt

1½ cups fresh broc­coli flo­rets 1 red bell pep­per, sliced

1 cup thinly sliced car­rot

(about 2 car­rots)

2 Tbsp. chopped green onion,

plus more for gar­nish

1 tsp. minced gar­lic

2 Tbsp. low-sodium soy sauce 1 Tbsp. sesame seeds, toasted 1 tsp. grated fresh gin­ger

or ¼ tsp. ground gin­ger 1. Heat oil in a large wok or skil­let over medium-high heat. Cook beef with salt, stir­ring, un­til browned, 2 to 3 min­utes. Move beef to side of wok. Add broc­coli, bell pep­per, car­rot, green onion, and gar­lic in cen­ter of wok; cook, stir­ring, 2 min­utes.

2. Stir in soy sauce, sesame seeds, and gin­ger, then stir beef from sides of wok back into veg­eta­bles. Con­tinue cook­ing, stir­ring, un­til veg­eta­bles are ten­der, about 2 min­utes more.
