SNOW GLOBE SUGAR COOKIES

2/3 cup butter, softened
2/3 cup shortening
11/2 cups sugar
2 tsp. vanilla extract
31/2 cups flour
2 tsp. baking powder
1 tsp. salt
Royal Icing (recipe below) or 9 oz. prepared icing (such as Wilton Cookie Icing)
Blue food coloring
Sprinkles, coarse decorating sugar, marshmallows, gumdrops, and graham crackers for decorating
Chocolate-frosted granola-nut bars for base
1. Arrange racks in upper and lower thirds of oven; preheat to 350°F. Line 2 baking sheets with parchment paper. 2. Cream together butter, shortening, and sugar in a large bowl with an electric mixer. Beat in eggs and vanilla. In another bowl, stir together flour, baking powder, and salt; stir into butter mixture until well blended. For each cookie, shape 1/2 cup dough into a ball and flatten into a 31/2-inch patty. Arrange at least 3 inches apart on prepared baking sheets.
3. Bake until centers are set, about 15 minutes, rotating sheets halfway through. Let cool on sheets a few minutes, then transfer to wire racks to cool completely.
4. Tint half of the Royal Icing light blue with blue food coloring. Frost about one-half of each cookie with blue icing. Frost remainder of each cookie with white icing; sprinkle blue side with white sprinkles and white side with coarse decorating sugar. Decorate cookies as desired with marshmallows, rolled-out gumdrops, graham crackers, and sprinkles. Attach a slice of granolanut bar to bottom edge of cookie with icing. Let dry completely.

ROYAL ICING Beat together 3 cups powdered sugar, 2 Tbsp. meringue powder, ½ tsp. cream of tartar, and ½ cup water in a bowl. Beat 3 minutes or until slightly thickened. If too thick, add a little water to make the consistency of pancake batter. Keep covered when not using. MAKES 2 CUPS
