2/3 cup but­ter, soft­ened

2/3 cup short­en­ing

11/2 cups sugar

2 eggs

2 tsp. vanilla ex­tract

31/2 cups flour

2 tsp. bak­ing pow­der

1 tsp. salt

Royal Ic­ing (recipe be­low) or 9 oz. pre­pared ic­ing (such as Wil­ton Cookie Ic­ing)

Blue food col­or­ing

Sprin­kles, coarse dec­o­rat­ing sugar, marsh­mal­lows, gum­drops, and gra­ham crack­ers for dec­o­rat­ing

Chocolate-frosted gra­nola-nut bars for base

1. Ar­range racks in up­per and lower thirds of oven; pre­heat to 350°F. Line 2 bak­ing sheets with parch­ment pa­per. 2. Cream to­gether but­ter, short­en­ing, and sugar in a large bowl with an elec­tric mixer. Beat in eggs and vanilla. In another bowl, stir to­gether flour, bak­ing pow­der, and salt; stir into but­ter mix­ture un­til well blended. For each cookie, shape 1/2 cup dough into a ball and flat­ten into a 31/2-inch patty. Ar­range at least 3 inches apart on pre­pared bak­ing sheets.

3. Bake un­til cen­ters are set, about 15 min­utes, ro­tat­ing sheets half­way through. Let cool on sheets a few min­utes, then trans­fer to wire racks to cool com­pletely.

4. Tint half of the Royal Ic­ing light blue with blue food col­or­ing. Frost about one-half of each cookie with blue ic­ing. Frost re­main­der of each cookie with white ic­ing; sprin­kle blue side with white sprin­kles and white side with coarse dec­o­rat­ing sugar. Dec­o­rate cook­ies as de­sired with marsh­mal­lows, rolled-out gum­drops, gra­ham crack­ers, and sprin­kles. At­tach a slice of gra­nolanut bar to bot­tom edge of cookie with ic­ing. Let dry com­pletely.

If too thick, add a lit­tle wa­ter to make the con­sis­tency of pan­cake bat­ter. Keep cov­ered when not us­ing. MAKES 2 CUPS
