lb. potatoes, peeled and cut into chunks
2¼ cups coleslaw mix
¾ cup minced onion
½ cup shredded sharp
1 Tbsp. coarse-grain mustard ½ tsp. salt
½ tsp. black pepper
Tbsp. vegetable oil
1. Bring potatoes and enough water to cover to a boil in a pot. Reduce heat to medium and simmer until tender, about 10 minutes. Drain and mash potatoes.
2. Meanwhile, stir together coleslaw mix and ½ cup water in a skillet over medium heat. Cook until tender, about 5 minutes. Drain thoroughly, then stir into mashed potatoes, along with onion, cheese, mustard, salt, and pepper.
3. Form mixture into 8 patties. Heat oil in a large skillet over medium-high heat. Add patties; cook until crisp and golden brown, about 5 minutes per side.
