lb. pota­toes, peeled and cut into chunks

2¼ cups coleslaw mix

¾ cup minced onion

½ cup shred­ded sharp

ched­dar cheese

1 Tbsp. coarse-grain mus­tard ½ tsp. salt

½ tsp. black pep­per

Tbsp. veg­etable oil

1. Bring pota­toes and enough wa­ter to cover to a boil in a pot. Re­duce heat to medium and sim­mer un­til ten­der, about 10 min­utes. Drain and mash pota­toes.

2. Mean­while, stir to­gether coleslaw mix and ½ cup wa­ter in a skil­let over medium heat. Cook un­til ten­der, about 5 min­utes. Drain thor­oughly, then stir into mashed pota­toes, along with onion, cheese, mus­tard, salt, and pep­per.

3. Form mix­ture into 8 pat­ties. Heat oil in a large skil­let over medium-high heat. Add pat­ties; cook un­til crisp and golden brown, about 5 min­utes per side.
