SELECTION AND STORAGE

At optimal ripeness,

papaya is slightly soft to the touch, and its skin is mostly yelloworange. It continues

to ripen at room temperature. Chill unripe green papaya to keep it

green. Or to speed ripening, store papaya in a paper bag with a banana

at room temperature.
