4 Tbsp. butter
15 buttery round crackers, crushed
1 lb. thick-cut cod, cut into quarters
¼ tsp. black pepper
¼ cup dry white wine
1½ Tbsp. fresh lemon juice
1 Tbsp. sliced green onion
1 lemon, cut into wedges
1. Preheat oven to 400°F.
2. Microwave 2 Tbsp. butter in a bowl until melted, about 30 seconds. Stir in crushed crackers. Melt remaining 2 Tbsp. butter in a 7x11-inch baking dish in oven, 1 to 3 minutes. Add cod; turn to coat. Sprinkle with pepper.
3. Bake 10 minutes. Turn fish over and drizzle with wine and lemon juice; top with cracker mixture. Bake 10 minutes more, until fish is opaque, flakes easily with a fork, and an instant-read thermometer inserted into thickest parts registers 145°F.
