1. CARAMEL APPLE DIP
Put 16 unwrapped caramels in a small microwave-safe bowl.
Add 2 Tbsp. water; microwave on High, stirring every 30 seconds, until mixture is melted and smooth, about 90 seconds. Beat together 8 oz. softened cream cheese and ½ cup packed brown sugar in a bowl with an electric mixer at medium speed until creamy and smooth, about 1 minute. Reduce speed to low and gradually beat in caramel mixture until well combined. Chill, covered, 1 hour or up to 3 days before serving. Makes 2 cups.
