Pis­ta­chio Chewy Bite Orzo Salad

SERVES 4 TO 6 1½ cups or­ganic orzo 1 tea­spoon plus 3 ta­ble­spoons ex­tra-vir­gin

olive oil, di­vided ¼ tea­spoon plus ½ tea­spoon sea salt, di­vided 8 to 10 leaves fresh mint, finely chopped ½ bulb fresh fen­nel, finely chopped ¼ cup toasted pis­ta­chio ker­nels, roughly

chopped* ¼ cup dried cran­ber­ries* ¼ tea­spoon finely ground black pep­per 2 ta­ble­spoons fresh lemon juice and zest of

½ lemon *To pre­pare the dish faster, sub­sti­tute with 4 roughly chopped Set­ton Farms Pis­ta­chio Chewy Bites

Fill a medium sauce­pot about ¾ full with wa­ter and bring to a boil. Add 1 tea­spoon olive oil and ¼ tea­spoon sea salt. Add orzo and cook ac­cord­ing to di­rec­tions, about 9 min­utes. Drain. Trans­fer cooked orzo into a large bowl and add mint, fen­nel, pis­ta­chios and cran­ber­ries (or Pis­ta­chio Chewy Bites), ½ tea­spoon sea salt, pep­per, fresh lemon juice and zest, and 3 ta­ble­spoons olive oil. Toss to­gether un­til well mixed. Sea­son to taste with ad­di­tional salt and pep­per. Source: Spork Foods, 2014
