Decadent Chocolate Mousse
Enjoying pleasurable foods, including dessert, is a key factor in ensuring success in your long-term healthy lifestyle. It’s a bonus when that dessert includes nutrient-rich and wholesome ingredients. Get your greens and your chocolate, too, with this nourishing chocolate mousse.
SERVES 2 1 ripe avocado, peeled and pitted ¼ cup raw cacao powder or unsweetened
cocoa powder 3 tablespoons maple syrup (plus an
extra tablespoon for sweeter mousse) ¾ teaspoon pure vanilla extract Pinch sea salt 1-2 tablespoons unsweetened coconut or almond milk (start with less and adjust to desired consistency)
Optional toppings: Shredded coconut Fresh berries Banana slices Cacao nibs Sprinkle of cinnamon Pinch of cayenne Place the avocado in a food processor or high-speed blender and process until smooth. Add the remaining ingredients, except the milk, and blend until combined. Slowly add a splash or two of coconut or almond milk until the mixture reaches a completely smooth consistency—this is a thick dessert. Transfer to a bowl and put in the refrigerator for at least 1 hour to set before serving. Serve in individual small bowls or glasses and add toppings of choice.
