Deca­dent Choco­late Mousse

En­joy­ing plea­sur­able foods, in­clud­ing dessert, is a key fac­tor in en­sur­ing suc­cess in your long-term healthy life­style. It’s a bonus when that dessert in­cludes nu­tri­ent-rich and whole­some in­gre­di­ents. Get your greens and your choco­late, too, with this nour­ish­ing choco­late mousse.

SERVES 2 1 ripe av­o­cado, peeled and pit­ted ¼ cup raw ca­cao pow­der or unsweet­ened

co­coa pow­der 3 ta­ble­spoons maple syrup (plus an

ex­tra ta­ble­spoon for sweeter mousse) ¾ tea­spoon pure vanilla ex­tract Pinch sea salt 1-2 ta­ble­spoons unsweet­ened co­conut or al­mond milk (start with less and ad­just to de­sired con­sis­tency)

Op­tional top­pings: Shred­ded co­conut Fresh berries Banana slices Ca­cao nibs Sprin­kle of cin­na­mon Pinch of cayenne Place the av­o­cado in a food pro­ces­sor or high-speed blender and process un­til smooth. Add the re­main­ing in­gre­di­ents, ex­cept the milk, and blend un­til com­bined. Slowly add a splash or two of co­conut or al­mond milk un­til the mix­ture reaches a com­pletely smooth con­sis­tency—this is a thick dessert. Trans­fer to a bowl and put in the re­frig­er­a­tor for at least 1 hour to set be­fore serv­ing. Serve in in­di­vid­ual small bowls or glasses and add top­pings of choice.
