An­gel Hair Pasta with Harissa Romesco

Gar­den fare can even be used on pasta night, and this has to be one of our ab­so­lute fa­vorites! The romesco sauce packs a se­ri­ous punch with roasted al­monds, and freshly-har­vested red peppers and toma­toes. Gar­lic, red wine vine­gar, and harissa paste add depth of flavor. Keep it gluten-free by us­ing gluten-free noo­dles.

SERVES 4 10 ounces an­gel hair

or lin­guini pasta 2 red bell peppers 1 ripe tomato 4 cloves gar­lic, skin on ½ cup raw al­monds 1 ta­ble­spoon grape seed oil

or av­o­cado oil ¼ cup olive oil 1-2 ta­ble­spoons red wine vine­gar

(re­duce for less acid­ity) ¼ tea­spoon smoked pa­prika ½ tea­spoon sea salt 1-2 ta­ble­spoons maple syrup 1-2 tea­spoons harissa paste

or ¼ tea­spoon red pep­per flake

To serve: 2-3 ta­ble­spoons ve­gan parme­san

cheese Fresh pars­ley or basil, chopped
