DIY HOMEMADE EXTRACTS
Homemade extracts are easy to make, cost less than store-bought pure extracts and taste better than imitation extracts. They also make great gifts. But the key ingredient is time—if you get them started now, you’ll have a batch ready for Christmas.
In an 8- or 12-ounce glass bottle, combine 1 cup 80-proof vodka with one of the below ingredients. Make sure the vodka covers it completely. Store in a cool, dark place and gently agitate every few days until it’s ready.
Vanilla extract: 3–6 whole vanilla bean pods, sliced down the middle (seeds in) Steep time: 6–12 months
Orange or lemon extract: Rind from 1 orange or lemon, cut into slices Steep time: 2–4 months
Almond extract: 15 raw almonds, roughly chopped Steep time: 6–8 weeks
