Spanish Rice & Fish

Feel free to swap in your favorite seafood—cod or catfish are good options—in this affordable, company-ready pantry dish.

1½ cups water

1 (14-oz) can no-salt-added petite diced tomatoes

1 (7-oz) box Spanish rice mix

½ lb tilapia fillets

¼ tsp pepper

4 lemon wedges

1. Preheat oven to 375°F. Bring water, tomatoes and rice mix to a boil in a saucepan. Remove from heat and pour into 2-qt (or 8 x 8-inch) baking dish. Cover tightly with foil. Bake 10 minutes.

2. Remove from oven and remove foil. Place tilapia fillets on top of rice mixture. Sprinkle fish with pepper. Top fish with lemon wedges. Replace foil and return to oven. Bake 20 minutes. Remove from oven and let stand 5 minutes before serving. Serves 4
