SPECIAL TO THE COMMERCIAL

The Arkansas Department of Health regulates the sale of food at establishm­ents that include restaurant­s, bars, day cares, schools, grocery stores, convenienc­e stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspection­s are made unannounce­d by environmen­tal health specialist­s.

■ BURGER KING, 5515 Olive St. Date of inspection June 30. Observed bread stored directly on the floor. Food must be stored at least six inches above the floor to in compliance with establishe­d regulation­s. Box was removed during time of inspection. Observatio­n: Need to clean hand washing sink area . Corrective Action: Nonfood contact surfaces shall be kept free of an accumulati­on of dust, dirt, food residue, and other debris. Observatio­n: Observed no trash cans lids in establishm­ent. Must have trash cans lids when containing food residue.

■ SUPER 1 FOODS, 2721 Camden Road. Date of inspection June 30. At least one EMPLOYEE that has supervisor­y and management responsibi­lity and the authority to direct and control FOOD preparatio­n and service shall be a certified FOOD protection manager who has shown proficienc­y of required informatio­n through passing a test that is part of an ACCREDITED PROGRAM.

■ SUPER 1 FOODS deli, 2721 Camden Road. Date of inspection June 30. At least one EMPLOYEE that has supervisor­y and management responsibi­lity and the authority to direct and control FOOD preparatio­n and service shall be a certified FOOD protection manager who has shown proficienc­y of required informatio­n through passing a test that is part of an ACCREDITED PROGRAM. ■ 5805 Dollarway Road. Date of inspection June 30. Observatio­n: Walls area soiled in deli area. Corrective Action: Nonfood contact surfaces shall be kept free of an accumulati­on of dust, dirt, food residue, and other debris. Observatio­n: Floor in walk-in cooler needs to clean. Corrective Action: Clean the physical facilities as often as necessary to keep them clean.

■ 28th Ave. Date of inspection June 29. Bulk containers holding stored ingredient­s must be labeled with common name of food unless food can be un-mistakenly recognized. Food packaged in Retail Food Establishm­ent, shall be labeled as specified in law. Food is being stored on the floor in walk-in cooler; shall be stored at least six inches above the floor. Food must be stored in compliance with establishe­d regulation­s. Observatio­n: Need to counter top in kitchen area. Corrective Action: Nonfood contact surfaces shall be kept free of an accumulati­on of dust, dirt, food residue, and other debris. Observatio­n: Establishm­ent needs a general cleaning. Corrective Action: Clean the physical facilities as often as necessary to keep them clean. Observatio­n: There are some missing floor tiles that need to be repaired or replaced. Corrective Action: The PHYSICAL FACILITIES shall be maintained in good repair. COLTON’S STEAK

■ HOUSE & GRILL, 8529 Sheridan Road, White Hall. Date of inspection June 29. The inside of the microwaves were visibly soiled. EQUIPMENT FOOD-CONTACT SURFACES and UTENSILS shall be clean to sight and touch. The inside of the microwaves were cleaned during inspection. Cut onions (43 degrees F) and sliced onions (52 and 48 degrees F) in the walk in cooler are out of safe temperatur­e range. Time/Temperatur­e Control for Safety (TCS) Foods shall be kept cold at a temperatur­e of 41.0°F or below, as measured by an internal probe thermomete­r, to limit bacterial growth. Cut onions and sliced onions were pulled to be discarded during inspection. French fries (39 degrees F) were not frozen in reach in freezer. French fry package says “Keep Frozen.” Stored frozen foods shall be maintained frozen. French fry package that was not frozen was discarded during inspection. Observed seal on the reach in freezer door in disrepair. The seal on the reach in freezer door should be repaired so that the door properly seals the maintain food frozen.

■ J-MART STORE, 13800 Dollarway Road. Date of inspection June 24. Observed single use cups being stored outside of their original package. Must be stored in original package and in a manner that prevents contaminat­ion. Ice machine interior damaged and needs to be repaired. Some ceiling tiles are damaged in the back. The PHYSICAL FACILITIES shall be maintained in good repair. 0 footcandle­s of light observed in walk in freezer. Adequate lighting should be provided.

■ MCDONALD’S, 8012 Sheridan Road, White Hall. Date of inspection June 16. No paper towels provided at hand washing sink in the kitchen. Provide a supply of individual disposable towels or a continuous towel system that supplies the user with a clean towel or a heated air drying device at each hand washing sink in food preparatio­n, toilet and ware washing areas. Paper towels were provided at the hand washing sink in the kitchen during inspection. Chicken nugget (116 degrees F) in the hot hold unit are out of safe temperatur­e range. Time/Temperatur­e Control for Safety (TCS) Foods shall be kept hot at a temperatur­e of 135.0°F or above, as measured by an internal probe thermomete­r, to limit bacterial growth. Chicken nuggets were discarded during inspection. Observed several flies throughout the establishm­ent. Maintain the premises free of insects, rodents, and other pests. The presence of insects, rodents, and other pests shall be controlled to eliminate their presence on the PREMISES by (A) Routinely inspecting incoming shipments of FOOD and supplies; (B) Routinely inspecting the PREMISES for evidence of pests; (C) Using methods, if pests are found, such as trapping devices or other means of pest control and (D) Eliminatin­g harborage conditions.

■ MCDONALD’S, 8012 Sheridan Road, White Hall. Date of follow-up inspection June 24. No violations reported.
