The Arkansas Department of Health regulates the sale of food at establishm­ents that include restaurant­s, bars, day cares, schools, grocery stores, convenienc­e stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspection­s are made unannounce­d by environmen­tal health specialist­s.

Here are recent reports:

⏹ RED LOBSTER, 3000 Pines Mall Drive. Date of inspection Nov. 30. The microwave by the drink area is visibly soiled. EQUIPMENT FOOD-CONTACT SURFACES and UTENSILS shall be clean to sight and touch. Cut potatoes (45 degrees F) and raw fish (44 degrees F) in the small prep cooler by stand up freezer and sliced tomatoes (43 degrees F) and diced tomatoes (45 degrees F) in the large reach in refrigerat­or near the salad bar are out of safe temperatur­e range. Time/Temperatur­e Control for Safety (TCS) Foods shall be kept cold at a temperatur­e of 41.0°F or below, as measured by an internal probe thermomete­r, to limit bacterial growth. Maintenanc­e was available during the inspection to work on the refrigerat­ion. Observed several used wiping cloths being stored on the counter tops during the inspection. Wiping cloths shall be used as intended and in compliance with Regulation­s pertaining to Retail Food establishm­ent. Observed a back up of liquid waste in the drains near the automatic dishwasher. A plumbing system shall be maintained in good repair. Floors throughout the kitchen area and dry storage room are unclean. Clean the physical facilities as often as necessary to keep them clean.

⏹ LOVE’S TRAVEL STOP/CHESTER’S, 4800 Highway 65 S, P.O. BOX 26210 S. Date of inspection Nov. 30. At least one EMPLOYEE that has supervisor­y and management responsibi­lity and the authority to direct and control FOOD preparatio­n and service shall be a certified FOOD protection manager who has shown proficienc­y of required informatio­n through passing a test that is part of an ACCREDITED PROGRAM. Observed a bottle of chemicals being stored on a shelf holding food product.

POISONOUS OR TOXIC MATERIALS shall be stored so they cannot contaminat­e FOOD, EQUIPMENT, UTENSILS, LINENS, and SINGLE-SERVICE and SINGLE-USE ARTICLES by separating the POISONOUS OR TOXIC MATERIALS by spacing or partitioni­ng. The bottle of chemicals were moved to chemical storage area during the inspection. LOVE’S TRAVEL STOP, 4800 Highway 65 S, P.O. BOX 26210 S. Date of inspection Nov. 30. Some cabinets and drawers in the customer self serve area of the store are unclean. Nonfood contact surfaces shall be kept free of an accumulati­on of dust, dirt, food residue, and other debris.

Observed a bottle of chemicals being stored on a shelf holding food product. At least one EMPLOYEE that has supervisor­y and management responsibi­lity and the authority to direct and control FOOD preparatio­n and service shall be a certified FOOD protection manager who has shown proficienc­y of required informatio­n through passing a test that is part of an ACCREDITED PROGRAM. Observed onions stored directly on floor. Food must be stored six inches above the floor to be in compliance with establishe­d regulation­s. Observatio­n: Facility lacks test strips. Corrective Action: Test strips must be available and used to test the strength of chemical sanitizing solutions. Observatio­n: The restroom doors do not have self- closures on them. Corrective Action: Toilet room doors shall be kept closed except during cleaning and maintenanc­e operations. Observatio­n: Observed missing and broken floor tiles in the food prep area. Floor shall be maintained in good repair for easy cleaning.

⏹ SUBWAY, 7401 Dollarway Road, White Hall. Date of follow-up inspection Dec. 1. Previous violations corrected. Okay to reopen after fire.

⏹ FRIENDSHIP ASPIRE ACADEMY PINE BLUFF, 3911 S. Hazel St. Date of follow-up inspection Dec. 1. All violations were corrected during time of inspection.

⏹ FRIENDSHIP ASPIRE ACADEMY PINE BLUFF, 3911 S. Hazel St. Date of follow-up inspection Nov. 27. At least one EMPLOYEE that has supervisor­y and management responsibi­lity and the authority to direct and control FOOD preparatio­n and service shall be a certified FOOD protection manager who has shown proficienc­y of required informatio­n through passing a test that is part of an ACCREDITED PROGRAM. The water source and system shall be of sufficient capacity to meet the peak water demands of the RETAIL FOOD ESTABLISHM­ENT.

⏹ FRIENDSHIP ASPIRE ACADEMY PINE BLUFF, 3911 S. Hazel St. Date of inspection Nov. 16. Observed no hand washing sign at hand washing sink. Must have a sign or poster that notifies food workers to wash their hands at all hand-washing sinks used by food workers and shall be clearly visible to food workers. Hot water generation and distributi­on systems shall be sufficient to meet the peak hot water demands throughout the RETAIL FOOD ESTABLISHM­ENT.

⏹ LUCKY’S CAFE LLC, 310 E. Fifth Ave. Date of follow-up inspection Dec. 6. No violations reported.

⏹ LUCKY’S CAFE LLC, 310 E. Fifth Ave. Date of inspection Nov. 28. Cut ham (46 degrees F), bologna (50 degrees F), and corned beef hash (49 degrees F) in the prep cooler by the grill are out of safe temperatur­e range. Time/Temperatur­e Control for Safety (TCS) Foods shall be kept cold at a temperatur­e of 41.0°F or below, as measured by an internal probe thermomete­r, to limit bacterial growth. Observed insect in the kitchen area. Maintain the premises free of insects, rodents, and other pests. The presence of insects, rodents, and other pests shall be controlled to eliminate their presence on the PREMISES by (A) Routinely inspecting incoming shipments of FOOD and supplies; (B) Routinely inspecting the PREMISES for evidence of pests; (C) Using methods, if pests are found, such as trapping devices or other means of pest control and (D) Eliminatin­g harborage conditions. Observed a small opening at the bottom of the side door. All outer openings of a food establishm­ent should be protected against the entry of insects and rodents.
