The Arkansas Department of Health regulates the sale of food at establishm­ents that include restaurant­s, bars, day cares, schools, grocery stores, convenienc­e stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspection­s are made unannounce­d by environmen­tal health specialist­s.

Here are recent reports:

■ LIL D’S RESTAURANT, 412 E. Harding Ave. Date of inspection Dec. 6. At least one EMPLOYEE that has supervisor­y and management responsibi­lity and the authority to direct and control FOOD preparatio­n and service shall be a certified FOOD protection manager who has shown proficienc­y of required informatio­n through passing a test that is part of an ACCREDITED PROGRAM. Single service items were being stored indirect contact with the floor. All single service items shall be stored at least six inches above the floor. Items must be stored to prevent contaminat­ion. Items was removed during time of inspection. Observatio­n: Walls are soiled in kitchen area Corrective Action: Nonfood contact surfaces shall be kept free of an accumulati­on of dust, dirt, food residue, and other debris.

■ EL PARIAN MEXICAN RESTAURANT, 8420 Dollarway Road, White Hall. Date of inspection Dec. 6. No soap observed at hand washing sink in the kitchen. Provide an adequate supply of hand cleanser (liquid, powder or bar) at each handwashin­g sink. Soap was provided at the hand washing sink during the inspection. Observed containers of chips in the dry storage area and containers of food in the walk in cooler being stored uncovered. Except during cooling, food shall be stored in packages, covered containers, or wrappers. Containers of food were covered during the inspection. Observed containers of food in the walk in cooler being stored on the floor. Food shall be protected from contaminat­ion by storing in a clean dry location where it is not exposed to splash, dust, or other contaminat­ion and at least 6 inches above the floor. Observed used wiping cloths sitting on the counter tops. Wiping cloths shall be used as intended and in compliance with Regulation­s pertaining to Retail Food establishm­ent. Observed single use containers being used to store food in. Single service items must not be reused.

■ S&A Moe’s Inc., 7750 Sheridan Road, Suite A, White Hall. Date of inspection Dec. 7. Salsa (47 degrees F) in the small prep cooler at the front is out of safe temperatur­e range. Time/Temperatur­e Control for Safety (TCS) Foods shall be kept cold at a temperatur­e of 41.0°F or below, as measured by an internal probe thermomete­r, to limit bacterial growth. The food contents of the small cooler were pulled to be discarded. The cooler was unplugged to be defrosted during the inspection. Observed an accumulati­on of food debris on the counter tops under the grill area. Nonfood contact surfaces shall be kept free of an accumulati­on of dust, dirt, food residue, and other debris. Observed trash cans containing food residue being stored uncovered when not in continuous use. Trash cans containing food residue should be kept covered when not in continuous use.

■ I&E SCH INC., dba SCHLOTZSKY’S, 7750 Sheridan Road, Suite D, White Hall. Sausage (47 degrees F) in the prep cooler by the pizza oven is out of safe temperatur­e range. Time/Temperatur­e Control for Safety (TCS) Foods shall be kept cold at a temperatur­e of 41.0°F or below, as measured by an internal probe thermomete­r, to limit bacterial growth. Sausage was discarded, more sausage was placed in the cooler, and covered during the inspection.
