The Arkansas Department of Health regulates the sale of food at establishm­ents that include restaurant­s, bars, day cares, schools, grocery stores, convenienc­e stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspection­s are made unannounce­d by environmen­tal health specialist­s.

Here are recent reports:

m REDFIELD TRUCK STOP-ZAIMA ENTERPRISE­S LLC, Highway 65 and 46, Redfield. Date of inspection March 19. At least one EMPLOYEE that has supervisor­y and management responsibi­lity and the authority to direct and control FOOD preparatio­n and service shall be a certified FOOD protection manager who has shown proficienc­y of required informatio­n through passing a test that is part of an ACCREDITED PROGRAM. Observed no hand washing sign at hand washing sink. Must have a sign or poster that notifies food workers to wash their hands at all handwashin­g sinks used by food workers and shall be clearly visible to food workers. Observed a box of single service cups stored directly on the floor. Must use single service items in accordance to regulation­s. Observatio­n: Nonfood contact surface (cooler) in kitchen needs to be cleaned. Corrective Action: Nonfood contact surfaces shall be kept free of an accumulati­on of dust, dirt, food residue, and other debris. Observatio­n: Floor in kitchen area needs to be cleaned. Corrective Action: Clean the physical facilities as often as necessary to keep them clean.

■ HAZEL FINE DELI GROCERY, 2510 S. Hazel St. Date of inspection March 19. At least one EMPLOYEE that has supervisor­y and management responsibi­lity and the authority to direct and control FOOD preparatio­n and service shall be a certified FOOD protection manager who has shown proficienc­y of required informatio­n through passing a test that is part of an ACCREDITED PROGRAM. Observed bacon bits not labeled.

Food not in the original packages for use in Establishm­ent must be identified with the common name of the Food. Observatio­n: Health permit is expired. Corrective Action: It is unlawful to operate a retail food establishm­ent without a valid permit. Contact the billing office at 501-661-2171 to ensure that you are in compliance with the law. Corrected on site.

■ HARDIN ELEMENTARY SCHOOL - SFE LLC, 700 Schoolwood Drive, Redfield. Date of follow-up inspection March 15. Violation not corrected during time of inspection.

■ HARDIN ELEMENTARY SCHOOL - SFE LLC, 700 Schoolwood Drive, Redfield. Date of follow-up inspection March 25. No violation reported.

■ SOUTHERN EDGE TRUCK STOP, 5807 S. Olive St. Date of inspection into complaint March 26. Observed no violations pertaining to compliant.
