The Arkansas Department of Health regulates the sale of food at establishm­ents that include restaurant­s, bars, day cares, schools, grocery stores, convenienc­e stores, bed and breakfast facilities, hotels/motels, mobile units and concession stands. Inspection­s are made unannounce­d by environmen­tal health specialist­s.

LITTLE CAESAR’S, 2300 W. 28th Ave. Date of inspection into complaint May 14. No violations pertaining to complaint found during the inspection.

SINGH BROTHERS LLC, 10008 Dollarway Road, White Hall. Date of inspection into complaint May 15. No violations pertaining to complaint during time of inspection. Corn dogs come in frozen from Performanc­e Foodservic­e.

SINGH BROTHERS LLC, 10008 Dollarway Road, White Hall. Date of inspection April 11. At least one EMPLOYEE that has supervisor­y and management responsibi­lity and the authority to direct and control FOOD preparatio­n and service shall be a certified FOOD protection manager who has shown proficienc­y of required informatio­n through passing a test that is part of an ACCREDITED PROGRAM. Observed raw fish and raw bacon being stored above vegetables in the kitchen walk in cooler. Separate raw animal foods during storage, preparatio­n, holding, and display from ready-to-eat food. Raw fish and raw bacon were moved to the bottom shelves during the inspection. Observed boxes of food in the walk in freezer being stored uncovered during the inspection. Except during cooling, food shall be stored in packages, covered containers, or wrappers. Exposed food was covered during the inspection. Chicken strips (121 degrees F) in the hot hold unit were out of safe temperatur­e range during the inspection. Time/Temperatur­e Control for Safety (TCS) Foods shall be kept hot at a temperatur­e of 135.0°F or above, as measured by an internal probe thermomete­r, to limit bacterial growth. The manager said they were cooked about 30 minutes before Inspector took a temperatur­e. The chicken strips were pulled and reheated to 193 and 197 degrees F. Observed used wiping cloths sitting on the counter tops. Wiping cloths shall be used as intended and in compliance with Regulation­s pertaining to Retail Food establishm­ent. Cutting board by the pizza prep area is visibly damaged. The cutting board should be resurfaced or replaced. The bottom of the pizza prep cooler is visibly unclean. Nonfood contact surfaces shall be kept free of an accumulati­on of dust, dirt, food residue, and other debris.

MCDONALD’S, 3610 Camden Road. Date of inspection into complaint May 16. No violations pertaining to compliant.
