EASY CORN SPREADS

Slather fresh sweet corn with nine tasty top­pers.

Peel back husks of 6 ears fresh corn, leav­ing husks at­tached at the base. Pull off and dis­card corn silks. Rinse and dry corn. If de­sired, coat lightly with but­ter and sea­son with salt and ground black pep­per. Fold husks around ears; tie with 100- per­cent kitchen string. Grill, un­cov­ered over medium heat 25 min­utes or un­til ker­nels are ten­der, turn­ing oc­ca­sion­ally.

1 BET­TER CHED­DAR

Be­fore grilling, spread or brush soft­ened or melted but­ter onto corn­cobs. Af­ter grilling, top corn­cobs with ched­dar cheese; cooked, crum­bled ba­con; and sliced or chopped green onions.

2 SAGE- ROSE­MARY

Finely snip fresh sage leaves and fresh rose­mary leaves. Stir herbs into soft­ened or melted but­ter. Spread onto corn af­ter grilling.

3 AVO­CADO- LIME

Spread home­made or pur­chased gua­camole onto corn­cobs af­ter grilling. Squeeze fresh lime juice over gua­camole.

4 SUGAR AND SPICE

Af­ter grilling, com­bine gran­u­lated sugar and ground cin­na­mon. Spread melted or soft­ened but­ter onto corn­cobs. Sprin­kle all sides of corn with cin­na­mon-sugar.

5 IN­DIAN

Com­bine melted or soft­ened but­ter, red curry paste, and a dash or two of hot sauce (if de­sired). Brush or spread mix­ture onto corn­cobs be­fore grilling. Af­ter grilling, sprin­kle with finely chopped pis­ta­chios.

6 BEAU­TI­FUL BA­SIC

In a small bowl com­bine olive oil, coarse sea salt, freshly ground black pep­per, crushed cumin seeds, and a dash of crushed red pep­per. Brush mix­ture onto corn­cobs be­fore and af­ter grilling.

7 TEX - MEX

Af­ter grilling, lightly spread may­on­naise onto corn­cobs. Sprin­kle with grated Cotija cheese and ground an­cho chile or chipo­tle chile pow­der.

8 PESTO - PARME­SAN

Af­ter grilling, brush corn­cobs with melted but­ter. Brush or spread with pur­chased pesto and top with shaved Parme­san cheese. If de­sired, sprin­kle with snipped fresh basil.

9 HERB GAR­DEN

Com­bine soft­ened but­ter, pur­chased herbed pep­per sea­son­ing blend, and de­sired snipped fresh herbs (such as thyme, dill, or pars­ley). Spread onto corn­cobs af­ter grilling.
