EASY CORN SPREADS
Slather fresh sweet corn with nine tasty toppers.
Peel back husks of 6 ears fresh corn, leaving husks attached at the base. Pull off and discard corn silks. Rinse and dry corn. If desired, coat lightly with butter and season with salt and ground black pepper. Fold husks around ears; tie with 100- percent kitchen string. Grill, uncovered over medium heat 25 minutes or until kernels are tender, turning occasionally.
1 BETTER CHEDDAR
Before grilling, spread or brush softened or melted butter onto corncobs. After grilling, top corncobs with cheddar cheese; cooked, crumbled bacon; and sliced or chopped green onions.
2 SAGE- ROSEMARY
Finely snip fresh sage leaves and fresh rosemary leaves. Stir herbs into softened or melted butter. Spread onto corn after grilling.
3 AVOCADO- LIME
Spread homemade or purchased guacamole onto corncobs after grilling. Squeeze fresh lime juice over guacamole.
4 SUGAR AND SPICE
After grilling, combine granulated sugar and ground cinnamon. Spread melted or softened butter onto corncobs. Sprinkle all sides of corn with cinnamon-sugar.
Combine melted or softened butter, red curry paste, and a dash or two of hot sauce (if desired). Brush or spread mixture onto corncobs before grilling. After grilling, sprinkle with finely chopped pistachios.
6 BEAUTIFUL BASIC
In a small bowl combine olive oil, coarse sea salt, freshly ground black pepper, crushed cumin seeds, and a dash of crushed red pepper. Brush mixture onto corncobs before and after grilling.
7 TEX - MEX
After grilling, lightly spread mayonnaise onto corncobs. Sprinkle with grated Cotija cheese and ground ancho chile or chipotle chile powder.
8 PESTO - PARMESAN
After grilling, brush corncobs with melted butter. Brush or spread with purchased pesto and top with shaved Parmesan cheese. If desired, sprinkle with snipped fresh basil.
9 HERB GARDEN
Combine softened butter, purchased herbed pepper seasoning blend, and desired snipped fresh herbs (such as thyme, dill, or parsley). Spread onto corncobs after grilling.
