GRILLED PEACH WHISKEY SMASH

4 small ripe peaches or 2 large ripe

peaches, pit­ted and quar­tered

2 lemons, halved

1/3 cup fresh basil leaves or fresh mint

leaves

1/4 cup honey

1 cup bour­bon

Ice cubes

11/4 cups club soda, chilled

1. If de­sired, place peach quar­ters and lemon halves, cut sides down, on a greased grill rack. Grill, cov­ered, over medium heat 5 min­utes un­til browned, turn­ing peach quar­ters once.

2. In a large jar with a screw-top lid com­bine peach quar­ters, lemon halves, basil, and honey. Use a mud­dler or the back of a spoon to crush the fruit and re­lease juices. Add bour­bon and ice cubes; cover and shake un­til very cold. Strain into ice-filled glasses. Top with club soda. Makes 4 drinks.
