GRILLED PEACH WHISKEY SMASH

4 small ripe peaches or 2 large ripe
peaches, pitted and quartered
2 lemons, halved
1/3 cup fresh basil leaves or fresh mint
1/4 cup honey
1 cup bourbon
11/4 cups club soda, chilled
1. If desired, place peach quarters and lemon halves, cut sides down, on a greased grill rack. Grill, covered, over medium heat 5 minutes until browned, turning peach quarters once.
2. In a large jar with a screw-top lid combine peach quarters, lemon halves, basil, and honey. Use a muddler or the back of a spoon to crush the fruit and release juices. Add bourbon and ice cubes; cover and shake until very cold. Strain into ice-filled glasses. Top with club soda. Makes 4 drinks.
