SWEET HERBED OVEN-FRIED CHICKEN
prep 20 minutes bake 22 minutes at 375° F
2 eggs, lightly beaten
1/4 cup milk
11/2 cups Kashi® Golean® Original cereal,
11/2 cups cornflakes, crushed
1/3 cup snipped fresh basil
1/2 tsp. salt
1/4 tsp. ground black pepper
6 skinless, boneless chicken breast
halves (about 2 lb. total) 1. Preheat oven to 375° F. Grease a 15×10×1- inch baking pan; set aside. In a shallow dish combine eggs and milk. In another shallow dish combine crushed cereals, basil, salt, and pepper. Dip chicken into egg mixture, then into cereal mixture, turning to coat.
2. Arrange chicken in the prepared baking pan, making sure the pieces do not touch. Sprinkle with any remaining cereal mixture.
3. Bake 22 to 25 minutes or until chicken is done ( 165° F). Do not turn chicken while baking. Serve with honey. Makes 6 servings.
