The Glory Days of Summer

It was July 4, 1980- something. Bruce Springstee­n was singing about Glory Days on the radio. My friend and I were fl oating on inner tubes in her uncle’s pool, soaking up the sun and enjoying the long, lazy days of summer. Hamburgers and hot dogs sizzled on the grill nearby and bowls of diff erent salads sat in a cluster on the picnic table.

This is how I remember celebratin­g 4th of July during my teenage years. And still today, one of my favorite things to do on July 4th is to have a backyard cookout with all the classics— hamburgers, hot dogs, potato salad, corn on the cob, and sweet, juicy watermelon. The recipes featured in “Easy, Breezy Summer Menu,” created by chef and author Nathan Lyon, are reminiscen­t of simpler times. Lyon’s choice of seasonal, fresh ingredient­s feels both vintage and current at the same time.

Keeping with the theme of uncomplica­ted summer recipes, you’ll also fi nd an allergen- friendly dessert idea from Caroline Shannon- Karasik, author of The Gluten- Free Revolution. Her Pistachio Crusted Orange and Dark Chocolate Cookies, which have a rich chocolate fl avor, are the perfect way to cap off any meal, summer or not. Let yourself be a kid again with these light, crunchy sweet treats.
