Pump­kin Pie Pro­tein Smoothie

Serves 1 Recipe adapted from Purely Pump­kin by Al­li­son Day

Think of this like pump­kin pie in a glass — with lots more pro­tein, fiber, and mi­cronu­tri­ents. This thick smoothie will keep you sat­is­fied for hours. ⅓ cup milk or nut milk, plus more to thin ⅓ cup pump­kin purée, chilled ⅓ cup plain or­ganic yo­gurt 1 Tbs. maple syrup ½ tsp. pump­kin pie spice ½ tsp. vanilla ex­tract 1 cup packed or­ganic spinach ½ ba­nana, peeled, cut into pieces, and frozen, or ½ fresh ba­nana ( use fresh for a thin­ner smoothie) 1 Tbs. MCT oil 2 ice cubes

1. Add all smoothie in­gre­di­ents to blender. Blend on high un­til smooth and creamy. Thin with ad­di­tional milk or wa­ter if de­sired. Serve im­me­di­ately.
