Try adding CHOPPED GREENS— chopped kale, col­lards, chard, or spinach— to chicken soup. Sim­mer un­til the greens are ten­der, 3– 10 min­utes ( depend­ing on which kind of green you’re us­ing). Make BEANS & GREENS. Soak beans and cook them un­til they’re done, then add sautŽed onion, gar­lic, and raw greens of your choice; stir and cook un­til the greens wilt. This same comb0 of veg­gies can be added to cooked brown rice or quinoa. If you pre­fer to eat kale in the form of a tasty snack food, try kale chips.
