Cook of the week: Elizabeth Howard

Elizabeth Howard is the first to admit that she’s not really a cook; however, with four children and a husband, she had to learn.

“I like easy things, because I’ve also worked and had to cook it quickly,” said Howard, Assistant Branch ManagerChi­ldren’s Services at CalhounGor­don County Library.

Howard, 52, said she got a lot of recipes from her mother.

Some of her children’s favorites were, sloppy Joes, hamburgers, homemade chili and most recently her now adult children like Mexican Bean Stew.

She chuckles at the memory when her kids were growing up they always made a joke about if the house ever burned down the fireman would find them all around the table.

“The fire alarm tended to go off a lot when I was cooking,” she said.

“I would say it was a sensitive fire alarm, the family would say I burned a lot of things,” Howard said.

Below she shares a few of those meals. Enjoy! 4 cans of chili 1- diced onion Several slices American cheese 1 ½ cup of shredded cheese 1 large bag of Fritos

Place chili, diced onion, shredded cheese and half of a bag of Fritos in a casserole dish and mix it all together. The mixture bowl should be thick, not juicy. Place American cheese on top. Bake at 30 to 45 minutes at 350 degrees until chili bubbles and American cheese on top bubbles/ browns.

2 cans of pounds of chicken breast ( drained) or 2 cups of fresh chicken off the bones 2 cans of Veg- All 1 can cream of chicken ( or celery) soup 2 piecrusts Salt and Pepper Tablespoon of butter

Mix soup, chicken, vegetables , salt and pepper. Put piecrust in bottom of 9 inch baking dish. Add the mixture. Place butter on top of mixture. Top with piecrust and seal edges. Bake at 375 degrees for 45 to 60 minutes until heated through.

4 cans Mandarin oranges ( drained)

2 cans Pineapple ( drained)

1 bag of small marshmallo­ws

2/ 3- cup sour cream mate)

Drain fruit, place in mixing bowl, add ¾ bag of marshmallo­ws and sour cream. Gently fold together. Refrigerat­e and serve when ready. This taste even better the next day because the marshmallo­ws have softened and the flavors have melted together.
