Three In­gre­di­ent Salad Dress­ing

1/4 sweet onion, chopped very fine 1 cit­rus fruit (you can use lime, lemon or or­ange) Ex­tra Vir­gin Olive Oil (use three-times more than the amount of cit­rus juice used) Salt and Pep­per to taste

Com­bine chopped onion and cit­rus juice and al­low to sit for at least ten min­utes. Add olive oil, salt and pep­per to taste, whisk to­gether and serve over the salad.
