Bring 1 cup water to a boil in a medium saucepan. Add 2 cups coconut
sugar (available at natural food stores and amazon.com). Reduce heat to low; simmer 6–8 minutes or until mixture reduces by one-third. Remove from heat; cool. Transfer mixture to a Mason jar. Refrigerate up to 3 months. Makes about 1¼ cups.
